There are several options, all depends on the type of holidays you are considering. eg. culture & history, beaches & islands, adventure, etc.

Best is to do backpackingin Thailand. you can get by with euro450 for a month staying in the many cheap, clean domitories, a few souvenir shopping, eating the delicious local meals and some travelling around the country by bus or train.
that is excluding your airfare. there are many airlines that fly to bangkok so shop around for the best bargain.

fyi, things are really cheap there. where on earth can you get a mcdonald's burger for euro1-2?
